Here’s the truth underneath all of it. It's SIMPLE I began eating for my best heath! Foods that raise my quality of life.

I eat so many different mushrooms and cultured foods because I’m healing from malnutrition. Not the dramatic, headline kind. The quiet, chronic kind that happens when a body survives for years on food that fills the stomach but doesn’t actually nourish the cells.

Mushrooms, ferments, wheatgrass, sprouts, cultured foods… they aren’t trends for me. They’re corrective. They’re information-rich. They rebuild terrain instead of just patching symptoms. When your body has been underfed at a cellular level, diversity matters. Enzymes matter. Living foods matter.

Most grocery store options are engineered for shelf life, profit, and addiction, not human health. Ultra-processed foods drain minerals, disrupt the gut, and confuse the nervous system. You can eat plenty and still be starving.

Cultured foods restore what modern diets strip away: microbial intelligence, bioavailable nutrients, and signals the body actually recognizes. Mushrooms support oxygen use, immune modulation, and nervous system regulation. Wheatgrass delivers minerals in a form the blood understands. Sprouts provide concentrated life force at a fraction of the cost of “superfoods.”

This way of eating isn’t about restriction. It’s about remembering what nourishment feels like when the body finally gets what it’s been asking for.
