Sprouts

Pros:

• Super enzyme-rich
• Easy to grow on your counter
• Gentle on digestion (depending on the seed)
Cons:
• Higher risk of bacterial contamination if not rinsed well
• Nutrients are strong but not as concentrated as microgreens
• Texture can be… squeaky
Microgreens
Think: the toddler phase with opinions.
Grown in soil or a grow mat, with light, usually harvested around 7–21 days old.
You eat only the stem + leaf.
Pros:
• Much higher nutrient density — up to 40× compared to mature vegetables
• Better flavor (peppery, sweet, crisp depending on the type)
• More chlorophyll + minerals
• Lower risk of contamination
Cons:
• Slightly more work to grow
• Need sunlight or a grow light
